Roasted veggie goodness

It’s been a funny day. The kind where you wake up and for some reason, things just don’t feel right. Today was one of those days. Maybe it was because I didn’t go to the gym this morning. I like to start the week as I mean to go on, but because I went out last night, and was planning on going this evening, I decided to give it a miss. Meh.

Last night was fun though. Dan and I met Trudi for a couple of beers (they drank beer, I stuck with the wine) then went to this Indian place on Enmore Road. I can’t quite remember the name of it but it was FFF something or other. I rarely choose to eat Indian unless someone else suggests it. Not sure why, because I always enjoy it! Last night I went for one of the lentil dishes. From what I recall, it was lentils in a tomato-based sauce with herbs and spices. I didn’t write it down. Not hard to spot I’m new at this blogging thing, right? I did remember to take a picture though, although my phone pic doesn’t really do it justice.

Food-wise, today was fairly typical. I started the day with a green smoothie, which, despite the face most people pull when they see it (it gets worse when I explain what’s in it), is the best way to start the day. This morning’s creation had a mango, a Lebanese cucumber, water, and a couple of handfuls of spinach. Yummy. I might not have made the gym, but at least I got a good breakfast in.

I got peckish around 11:00 so at the box of dehydrated tomatoes I’d brought with me to put in a salad. By lunch time, I was feeling the need for something with some substance, and a salad just wasn’t going to cut it. So, I went on a mission for a wrap, specifically, a wrap with avocado in it. There are so many places in North Sydney to get lunch, and while I don’t do it often, I have a fair idea about where to go to get a good deal. Today I went to my favourite sandwich place and got an amazing salad wrap. A spinach wrap with mixed greens, carrot, cucumber, avocado, capsicum and pickles came in a five bucks! The girl who made it seemed somewhat pained that I didn’t want any sauce, or (gasp) cheese, but it was exactly what I was in the mood for.

I munched this bad boy sitting on a wall by the Christmas tree. It was really nice to get outside in the sunshine. The aircon in my office always seems to be on full, so while it was 27C outside, it felt like minus 7 at my desk.

This afternoon, things went downhill. The cause: wasabi peas. I’ve been craving wasabi peas since Hallowe’en and today decided that it was time to satisfy said craving. Problem is though, I have no self control. Over the course of about three hours I ate more wasabi peas than a) was necessary, and b) I want to ever again. I felt like absolute crap, and I distinctly remember at one point wishing they were sugar snap peas instead. Should’ve listened.

But of course, I got home and had a Dan to feed, and as always, I was ready to eat. I decided to resolve my lack of food problem by roasting a heap of veggies. In the mix there was sweet potato, Japanese squash, carrot, parsnip, broccoli and cauliflower. It made the world a better place, and on the plus side, I now have food till Thursday! Dan added a kangaroo steak to his plate, which he cooked until it looked like boot leather. He seemed to enjoy it though. This pic was taken after we’d eaten. I like to cook in bulk…

I followed this up with a couple of yesterday’s truffles. I actually got a text from Trudi earlier say how much she liked them so I think I’ll be making them again 🙂

Time for sleeps I think.

This weekend I intend to sort out how this blog looks and make everything a bit more uniform. I know it’s a bit of a mess right now but I’ll figure it out.
